Roasted Cauliflower


Cooking is one of my favorite things to do and I haven't posted much about food in a long time. I recently made this roasted cauliflower and it was so good I had to share, I just love cauliflower!

Here is the super easy recipe

Ingredients:
One head of cauliflower
Olive Oil
Herbs (fresh or dry)
Parmesan Cheese
Salt
Pepper

Recipe:
1. Preheat oven to 450
2. Toss your cauliflower with a drizzle of olive oil on a baking sheet
3. Roast cauliflower for 20 minutes, stirring every 5 minutes
4. Sprinkle with herbs (I used an Italian blend) roast for 5 more minutes
5. Sprinkle with parmesan cheese 
6. Season to taste with salt and pepper

Voila! Enjoy!!

Instant Pancake Mix
Pancakes
Today I tried a new recipe, Alton Brown's recipe for "Instant" Pancake Mix, you know, like Bisquick. The recipe has fantabulous reviews, 500 something 5 stars. 
WHAT!?
That's just crazy, I had to try it.
So the recipe for the dry ingredient is enough to make pancakes on 3 separate occasions.

Store your pancake mix for next Pancake Sunday
The wet ingredients called for buttermilk, like always, we didn't have any so made our own sour milk.
Just, apple cider vinegar mixed with milk.
The recipe also calls for egg whites to be mixed with the milk
it made a ton of little bubbles in the milk

Mix the wet and the dry
Mix until just combined
don't try to get the lumps out
Since these pancakes are plain you can add whatever your little heart desires.
One of my little hearts asked for bananas on her's
Since there is a lot of butter in these pancakes and you need to butter the griddle (so they don't stick)
the tops and bottoms are super yummy crispy
Just when I was finishing up my plate of pancakes, hubby woke up and ate all the rest. 
Then declared he loved them
I didn't.
The batter was way to runny for my liking and from experience runny=eggy.
I like big and fluffy.
These were borderline crepe-y to me. Everyone else liked them though so I suppose I'll be making them again, especially since I have the mix hanging out in my pantry.

Apple-Pie Cake

Today is a special day, my sweet baby's second birthday. For her birthday instead of a cake I came across this recipe for Apple-Pie Cake and had to make it. We just went to an apple festival and came home with bags of apples so this was the perfect use for them.

Carrot Cake Pancakes
with
Honey Butter

These were the best pancakes by far, in fact I'm thinking about scrapping Pancake Sunday posts and just making these every Sunday for the rest of my life. They were so good! And lucky for you I am posting the recipe to these pancakes because I happened to get it off a public recipe site instead of out of a book. So you can enjoy them too!

Flour mixture of: flour, baking powder, salt, walnuts, cinnamon, nutmeg, cloves, ginger


I've always been fascinated by the patterns vanilla makes when added to milk

Grating carrots is a messy and time consuming job

Fold in carrots gently!

Mixed until just moist


I love pancakes that have some color!

BEST. PANCAKES. EVER.

Get your pens and paper ready!
(here's the moment you've been waiting for)

Carrot Cake Pancakes
1 1/4 cp flour
1/4 cp chopped walnuts
2 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/8 tsp nutmeg
dash of cloves
dash of ginger
(I like spice so I used a few more "dashes" of all the spices...add as much as you want, you know what you like)
1/4 cp brown sugar
3/4 cp buttermilk
1 tbsp oil
1 1/2 tsp vanilla
2 eggs, beaten
2 cp finely grated carrot (I used a whole 1lb bag)

Honey Butter
3 tbsp butter, softened
2 tbsp honey

Directions
Combine flour, walnuts, baking powder, cinnamon, salt, nutmeg, cloves and ginger in a large bowl.
Combine brown sugar, buttermilk, oil, vanilla and eggs in a smaller bowl.
Add milk mixture to flour mixture, do not over stir.
GENTLY fold in carrots. (I combined milk and flour mixtures before grating the carrots to allow them to rise slightly)

Pour 1/4 cp batter on hot griddle and cook cook cook! (I got 13 pancakes out of this recipe)

For the honey butter just combine the honey and butter (I set it in the fridge to set up slightly)

Serve pancakes with honey butter and whatever else you want, I also topped mine with whipped cream but I tried them with just the honey butter and they were still the best things ever.
