Sometimes after a few weeks of eating fancy pancakes it's good just to take a break and go back to the basics. Consider it a pancake palette cleanser, if you will. I happened to have some buttermilk in the fridge to use for fried chicken for dinner (um, yum) so decided since I have more than I'll need for dinner, I might as well make some fluffy basic plain ol' buttermilk pancakes!
You can never go wrong with buttermilk pancakes

Basic dry ingredients |
Make a well in the flour for the wet ingredients |
Thick velvety buttermilk |
Perfect consistency, a bit thinner than sour cream |
No bubbles on the tops of these pancakes, watch for dry edges |

Buttermilk Pancakes
(makes about 15)
2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
4 tablespoons oil/or butter melted
1 cup buttermilk plus more (a little at a time) to create desired consistency
